Chocolate-covered peanut butter pretzel bites

Today was our December potluck at Harvest, and I was in the mood to try a new recipe.  I've always wanted to do chocolate-covered pretzels, and I found this recipe on bakedperfection.com.  That blog is absolutely amazing, and this recipe is one of the many reasons why.  

I made a couple adaptations to the recipe on there, so here's what I did.

Ingredients:

1 1/2 cups creamy peanut butter
1/2 cup (1 stick) butter softened
3 cups confectioners' sugar
1/2 tsp salt
1 lb bag square shaped pretzels
12 oz. package semi-sweet chocolate chips
12 oz. package white chocolate chips
12 oz. package any type of chocolate (I only used two bags, and that was not enough.  Buy more chocolate!)

Recipe:

Mix the peanut butter, butter, sugar, and salt in a bowl. It's easier if you add the sugar a little at a time and mix in between.  Adding it all at once makes a huge mess when you're mixing.  It'll look something like this when it's done:

Next, roll the peanut butter mix into balls by taking ~1/2 tsp. portions.  Make little pretzel peanut butter sandwiches, and freeze them for ~20 minutes to set the peanut butter.  Here's what they look like pre-chocolate:

To get the bites covered in chocolate, microwave the chocolate until it's melted.  You don't want to explode/scorch the chocolate, so I found it best to do it in about 1 minute intervals, stirring in between.  Towards the end, you might need to reduce the microwaving time.  Also, you should do one package of chips at a time so that the chocolate doesn't dry while it's waiting to be used.

Lastly, take the bites and carefully cover them in chocolate.  This step is harder than it sounds because you want to make sure they're covered but not overly so.  I used a couple of forks to dip the bites/let them drip/remove excess chocolate.  Once they're adequately covered, place them on wax paper.  Cover them with sprinkles, and let them dry.

While exceptional, these are not for the faint of heart.  The recipe is hard to mess up, but all of that sandwich-making and chocolate dipping took about 3 hours.  These are great for a special occasion or gift, but make sure you've got the time to devote.  It's well worth it, though, and I'll definitely be making these again.
